Much easier than expected.
I had a lot of doubts about applying veneer tape. It turned out to be incredibly simple: heat an iron, put the tape in place, iron it, wait for cooling, trim the excess, and do a bit of 220 sanding. I'm not even a particularly good trimmer and it came out really well. The edges are practically indistinguishable from the tops and bottoms of the shelves.

Birch Wood Edge Tape
This product worked great. It was used to cover the ends of plywood to make a set of painted shelves. The tape I bought was "iron on" and it made the task even easier. Recommended.
