It's interlocked grain structure looks incredible with oil finishes, so you can get an exquisite appearance without much fuss. However, that same interlocked grain can tear when using hand planes and power planers - a good work around is to skew your cutting angle as much as you can, and do some clean up with a time-honored card scraper or scraper plane.
