I am just completing a couple of cutting boards that use purpleheart edging, and wonder about the finish. For a cutting board I usually use a salad bowl finish which is tung oil and varnish. However I want to keep the purple around as much as possible. Is there a water-based finish that would be appropriate for a cutting board? As an alternative, I considered finishing the board and edging separately before gluing.

Carlos, all of the water based finished I know about are film top coats, not a good finish for a cutting surface. Check this discussion on butcher blocks for what these folks use.

I would still persue finding a wide belt sander. You only want to remove 1/32. I know shops resist doing outside work but your request is reasonable and easy. There are many retirement centers in Yuma and some will have a woodshop with a sander. It may not be a commercial wide belt but a Performax, JET or Delta 16-32 drum sander will do the job nicely.
